For anyone who may be interested, I just heard from Chef Trish at Boma regarding that great tofu she used (the one with the surprisingly chickeny texture). It turned out to be Veggie Chick'n Strips made by Gardein-Garden Grown Protein, put out under the name It's All Good.

The strangest thing is that the local Hannaford just started carrying the It's All Good brand (though not these particular strips). I'll definitely be trying their other products because these strips (aided, I'm sure, by Chef Trish's awesome sauces) were really tasty and very texturally satisfying.
Apparently they are made by the same company (gardein) that makes Morning Star Meal Starters Chik'n strips. The ingredients look very much the same, though I swear these were better than the Morning Star. Maybe it was all the chef.
